Spicy Sesame Potato Salad

Sometimes I get really inspired by the salads at Wheatsville Co-op. I had one like this a few weeks ago and I thought it was an interesting idea but needed more flavor and this is what I came up  with, it is all little crazy but I thought it was great!

Steam for 20 minutes

5 yukon gold potatoes

Toast

1 Tablespoon sesame seeds
1/2 teaspoon coriander seeds
1/2 teaspoon mustard seeds
1 teaspoon cumin seeds

Add to

3 Tablespoons peanut (or sunflower) oil

In a a large bowls toss potatoes, infused oil, and

1/2 cup cilantro, minced
1/2 teaspoon red chili flakes
1 Tablespoon lemon juice
1 Tablespoon Braggs Liquid Aminos (or soy sauce)
1/2 teaspoon smoked salt

Enjoy!

    That salad is so pretty. I’ve been eating a lot more potatoes lately, but I keep making naughty choices- like home fries, or potato salads slathered in veganaise. I will definitely try out your gorgeous salad next time I get a hankering for taters.

    Yum! Those potatoes look so good, and I’ve been trying to find more easy ways to prepare them. I recently roasted some with sesame seeds and toasted sesame oil, which was also very good…I bet I’ll love your version, so I bookmarked it to try sometime this week.
